Ingredients
For chicken:
- 500 g chicken (bone-in or boneless)
- 1 cup fresh methi leaves (cleaned & chopped)
- 1 large onion (finely chopped)
- 1 tomato (pureed)
- 1 tbsp ginger-garlic paste
- 2 green chillies (slit)
- ½ cup fresh cream (malai)
- ½ cup milk (adjust for gravy consistency)
- 2 tbsp curd (beaten)
- 1 tsp kasuri methi
- ½ tsp garam masala
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp red chilli powder (adjust)
- 2 tbsp oil or ghee
- Salt as required
Instructions
- Sauté the methi
- Heat 1 tbsp oil in a pan → add fresh methi leaves.
- Cook for 2–3 minutes until raw smell goes away. Keep aside.
- Cook the chicken
- In the same pan, heat 1 tbsp oil/ghee.
- Add cumin seeds → let them splutter.
- Add onions → sauté until golden brown.
- Add ginger-garlic paste & green chillies → fry until aroma comes.
- Add tomato puree + turmeric + coriander + red chilli powder → cook till oil separates.
- Add chicken pieces & curd → mix well & cook for 5–6 mins.
- Make it creamy
- Add sautéed methi leaves into the chicken.
- Pour milk & cook until chicken becomes tender.
- Add cream, garam masala & kasuri methi → simmer 2–3 mins.
- Adjust salt and thickness as needed.
Serve
Garnish with a pinch of kasuri methi & serve hot with:
