🧂 Ingredients

For the Dough:

  • All-purpose flour (maida) – 2 cups
  • Ghee – 4 tbsp (melted)
  • Water – as needed

For the Filling:

  • Khoya (mawa) – 1 cup (grated)
  • Powdered sugar – ½ cup
  • Desiccated coconut – 2 tbsp
  • Chopped dry fruits (almonds, cashews, pistachios, raisins) – ¼ cup
  • Cardamom powder – ½ tsp
  • Ghee – 1 tsp (for roasting)

For Frying:

  • Ghee or refined oil – as required

👩‍🍳 Step-by-Step Method

Step 1: Prepare the Dough

  1. In a bowl, mix flour and melted ghee.
  2. Rub gently between your palms until the mixture turns crumbly.
  3. Add water gradually to form a firm yet smooth dough.
  4. Cover and rest it for 30 minutes.

Step 2: Make the Filling

  1. Heat 1 tsp ghee in a pan, add khoya, and roast until it turns light golden.
  2. Remove from flame and let it cool.
  3. Add powdered sugar, desiccated coconut, dry fruits, and cardamom powder.
  4. Mix well — your sweet filling is ready!

Step 3: Shape the Gujiya

  1. Divide the dough into small lemon-sized balls.
  2. Roll each ball into a small circle (like a puri).
  3. Place 1–2 tsp of filling in the center.
  4. Fold into a half-moon shape and seal the edges with a little water.
  5. Use a fork or gujiya mould for beautiful edges.

Step 4: Fry to Perfection

  1. Heat ghee or oil on low-medium flame.
  2. Fry gujiyas in batches until they turn golden brown.
  3. Drain on paper towels and let them cool completely.

🍯 Optional Step – Sugar Syrup Glaze

For a glossy finish, dip the fried gujiyas in warm sugar syrup (1-string consistency) for 1–2 minutes and let them dry.

🌸 Serving Suggestion
