🥒❄️ Irresistible Cucumber Curry Recipe 🍛
🧂 Ingredients:
- 2 medium cucumbers (peeled, deseeded & chopped)
- 1 small onion (finely chopped)
- 1 green chili (slit or chopped, adjust to taste)
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 tsp sambar powder (or mild chili powder)
- 3 tbsp grated coconut (fresh or frozen)
- 1/4 cup plain yogurt or curd (whisked)
- A few curry leaves
- Salt to taste
- 1 tsp oil (preferably coconut oil or any neutral oil)
- Fresh coriander for garnish (optional)
👩🍳 Instructions:
- Prep the cucumber: Peel the cucumbers, remove the seeds if large, and chop into small pieces.
- Cook the base: Heat oil in a pan. Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, and green chili. Sauté for a few seconds.
- Add onions & spices: Add chopped onion and sauté until translucent. Add turmeric and sambar powder.
- Simmer cucumber: Add chopped cucumber and a little water (about 1/4 cup). Cover and cook on medium heat for 6–8 minutes until soft but not mushy.
- Finish with coconut & yogurt: Add grated coconut and stir gently. Turn off the heat, let it cool slightly, then stir in whisked curd.
- Taste & serve: Adjust salt and serve warm or at room temperature. Garnish with fresh coriander if desired.
