🥭 Mango Date Energy Bites (Vegan + Gluten-Free)
✅ Ingredients:
- ½ cup dried mango slices (unsweetened)
- 1 cup soft dates (seedless)
- ½ cup rolled oats (or almond flour for low-carb)
- ¼ cup desiccated coconut (plus extra for rolling)
- 2 tbsp chia seeds or flax seeds (optional)
- 1 tbsp nut butter (peanut, almond, or cashew)
- 1 tbsp lemon juice (optional, for brightness)
- Pinch of salt
👩🍳 Instructions:
- Soak dried mango slices in warm water for 10 minutes to soften (if very dry). Drain.
- In a food processor, blend dates and mango until smooth.
- Add oats, nut butter, coconut, chia seeds, lemon juice, and salt. Blend until a sticky dough forms.
- Scoop out small portions and roll into balls.
- Optional: Roll each bite in desiccated coconut for a pretty finish.
- Chill for 15–20 minutes before storing in an airtight box in the fridge.
