🌿 1. Drumstick Leaves Rasam Soup (Murungai Keerai Rasam)
Ingredients:
- 1 cup drumstick leaves (cleaned)
- 1 small tomato (chopped)
- 1 small lemon-sized tamarind (soaked in warm water)
- 1 tsp black pepper
- 1 tsp cumin seeds
- 4–5 garlic cloves
- 1/4 tsp turmeric powder
- Salt to taste
- 1 tsp ghee
- Few curry leaves
- A pinch of hing
Instructions:
- Crush pepper, cumin, and garlic coarsely.
- In a pot, heat ghee. Add mustard seeds, curry leaves, and hing.
- Add chopped tomatoes and sauté till soft.
- Add tamarind water, turmeric, and salt. Let it boil for 5–7 minutes.
- Add drumstick leaves and cook for 3 minutes.
- Add the crushed spices and turn off the heat.
- Close the lid for 5 minutes and serve hot like soup or rasam.
🍄 2. Mushroom & Pepper Soup
Ingredients:
- 1 cup chopped mushrooms (button or oyster)
- 1 small onion (finely chopped)
- 3–4 garlic cloves (chopped)
- 1 tsp crushed black pepper
- 1 tbsp coconut milk (optional)
- 1 tsp oil or butter
- 2 cups vegetable stock or water
- Salt to taste
- Coriander leaves for garnish
Instructions:
- Heat oil in a pan. Sauté garlic and onion until translucent.
- Add mushrooms and cook until they release water and shrink.
- Add crushed pepper, salt, and stock. Let it simmer for 10 minutes.
- Add coconut milk (if using) and simmer for another 2 minutes.
- Garnish with coriander leaves. Serve hot.
🥕 3. Spiced Carrot-Ginger Soup
Ingredients:
- 2 medium carrots (peeled & chopped)
- 1 small onion
- 1-inch ginger (peeled & sliced)
- 1/2 tsp turmeric powder
- 1 tsp coconut oil
- 2 cups water or veg stock
- Salt & pepper to taste
- Lemon juice – a few drops
Instructions:
- Heat oil, sauté onion and ginger for 2–3 mins.
- Add carrots, turmeric, and water. Cook until carrots soften.
- Cool slightly and blend to a smooth puree.
- Reheat, season with salt and pepper.
- Add lemon juice before serving.
🌽 4. Sweet Corn & Turmeric Soup
Ingredients:
- 1/2 cup sweet corn kernels
- 1 small onion (chopped)
- 2 garlic cloves
- 1/4 tsp turmeric powder
- 1/2 tsp crushed black pepper
- 2 cups water or veg stock
- Salt to taste
- 1 tsp oil
- Chopped coriander (for garnish)
Instructions:
- Heat oil in a pan. Add garlic and onion; sauté till soft.
- Add corn, turmeric, salt, pepper, and water.
- Let it simmer for 10 minutes.
- Blend half the mixture for thickness; keep the rest chunky.
- Garnish and serve hot.
🍅 5. Tomato & Moong Dal Rasam (Paruppu Rasam)
Ingredients:
- 1/4 cup moong dal (cooked & mashed)
- 1 medium tomato (chopped)
- Lemon-sized tamarind (soaked)
- 1 tsp rasam powder or pepper-cumin powder
- 1/4 tsp turmeric
- Salt to taste
- 1 tsp ghee
- 1/2 tsp mustard seeds
- Curry leaves & coriander for garnish
- Pinch of hing
Instructions:
- In a vessel, add tamarind water, tomato, turmeric, and salt. Boil till tomatoes soften.
- Add rasam powder and mashed dal. Adjust water consistency.
- Bring it to a light boil. Turn off heat.
- In a tadka pan, heat ghee, add mustard seeds, curry leaves, and hing.
- Pour the tempering into rasam. Garnish with coriander. Serve hot.
