🧂 Ingredients for Masala Mix:
- Almonds (Badam) – ½ cup
- Cashews (Kaju) – ¼ cup
- Pistachios (Pista) – ¼ cup
- Cardamom (Elaichi) – 10 pods
- Saffron (Kesar) – a generous pinch
- Nutmeg (Jaiphal) – ¼ tsp (grated)
- Black pepper – 3 to 4 whole (optional for warmth)
- Sugar or Mishri (Rock Sugar) – 3 tbsp (optional)
🥣 To Make Masala Powder:
- Roast lightly the almonds, cashews, and pistachios in a dry pan on low flame for 2–3 minutes — just until fragrant (don’t brown).
- Allow them to cool, then add cardamom, nutmeg, saffron, and sugar/mishri.
- Grind everything into a coarse powder. Store in an airtight jar for up to 1 month.
🥛 To Make Masala Doodh:
- Boil 1 cup of milk (full cream preferred).
- Add 1 to 1½ tsp of masala mix and simmer for 3–4 minutes.
- Stir continuously to avoid sticking.
- Sweeten to taste (with sugar, honey, or jaggery).
- Pour into a glass or kulhad and garnish with few chopped nuts and saffron strands.
