Ingredients
- Walnuts – 1 cup
- Seedless dates – 8 to 10 (or figs)
- Unsweetened cocoa powder – 1 tbsp (optional)
- Desiccated coconut – 2 tbsp (optional)
- Cardamom powder – a pinch
- Ghee or coconut oil – 1 tsp
Method
- Dry roast walnuts on low flame until aromatic; cool and grind coarsely
- Soak dates in warm water for 10 minutes; grind into a smooth paste
- Heat a pan, add ghee or coconut oil
- Add date paste and cook on low flame until thick
- Add ground walnuts, cocoa powder, coconut, and cardamom
- Mix well and cook until the mixture leaves the pan sides
- Transfer to a greased plate and spread evenly
- Let it cool, then cut into bite-sized fudge pieces
Tips
- Skip cocoa for a plain walnut fudge
- Add a little milk if the mixture feels too dry
- Store in the refrigerator for up to 5 days
