🧂 Ingredients:
- 4 large eggs
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chilli, chopped (optional)
- ½ tsp cumin seeds
- ½ tsp turmeric powder
- ½ tsp red chilli powder
- ½ tsp garam masala
- Salt to taste
- 1 tbsp oil or ghee
- 2 tbsp chopped coriander leaves
- (Optional for extra protein): 2 tbsp paneer crumble or boiled moong
👩🍳 Instructions:
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add tomatoes, green chilli, and all the dry spices. Cook until the tomatoes soften and oil separates.
- In a bowl, whisk eggs with a pinch of salt.
- Pour the eggs into the pan and stir continuously on low heat until they form soft, scrambled curds.
- Mix in paneer or boiled moong if using, and cook for another minute.
- Garnish with coriander leaves and serve hot.

- Whole wheat roti, multigrain bread, or millet toast
- Fresh cucumber & onion salad on the side
