🍗 Easy Butter Chicken Recipe (Serves 2)
Ingredients:
For the Chicken Marinade:
- 250g boneless chicken (cut into small cubes)
- 3 tbsp curd/yogurt
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ½ tsp garam masala
- Salt to taste
- 1 tsp ginger-garlic paste
For the Gravy:
- 2 tbsp butter
- 1 tbsp oil
- 1 medium onion (finely chopped)
- 1 tsp ginger-garlic paste
- 2 medium tomatoes (pureed)
- 1 tsp red chili powder (adjust to taste)
- ½ tsp garam masala
- 1 tsp kasuri methi (dried fenugreek leaves)
- Salt to taste
- 2-3 tbsp fresh cream
- Fresh coriander for garnish
🔪 Steps:
1. Marinate the Chicken
- In a bowl, mix chicken with curd, chili powder, turmeric, garam masala, salt, and ginger-garlic paste.
- Let it marinate for 30 minutes to 2 hours (longer is better but optional).
2. Cook the Chicken
- Heat 1 tbsp oil + 1 tbsp butter in a pan.
- Add marinated chicken and cook on medium flame until chicken is cooked and lightly browned. Set aside.
3. Prepare the Gravy
- In the same pan, add another 1 tbsp butter.
- Sauté chopped onions until golden.
- Add ginger-garlic paste and sauté for 1 minute.
- Add tomato puree, chili powder, and salt. Cook till oil separates (5–7 minutes).
- Add cooked chicken and ¼ cup water. Simmer for 5–7 minutes.
4. Finish the Dish
- Add cream, garam masala, and crushed kasuri methi.
- Mix well and simmer for 2 more minutes.
- Garnish with fresh coriander.

Serve hot with roti, naan, or jeera rice.
