🍗 Easy Butter Chicken Recipe (Serves 2)

Ingredients:

For the Chicken Marinade:

  • 250g boneless chicken (cut into small cubes)
  • 3 tbsp curd/yogurt
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • ½ tsp garam masala
  • Salt to taste
  • 1 tsp ginger-garlic paste

For the Gravy:

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 medium onion (finely chopped)
  • 1 tsp ginger-garlic paste
  • 2 medium tomatoes (pureed)
  • 1 tsp red chili powder (adjust to taste)
  • ½ tsp garam masala
  • 1 tsp kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • 2-3 tbsp fresh cream
  • Fresh coriander for garnish

🔪 Steps:

1. Marinate the Chicken

  • In a bowl, mix chicken with curd, chili powder, turmeric, garam masala, salt, and ginger-garlic paste.
  • Let it marinate for 30 minutes to 2 hours (longer is better but optional).

2. Cook the Chicken

  • Heat 1 tbsp oil + 1 tbsp butter in a pan.
  • Add marinated chicken and cook on medium flame until chicken is cooked and lightly browned. Set aside.

3. Prepare the Gravy

  • In the same pan, add another 1 tbsp butter.
  • Sauté chopped onions until golden.
  • Add ginger-garlic paste and sauté for 1 minute.
  • Add tomato puree, chili powder, and salt. Cook till oil separates (5–7 minutes).
  • Add cooked chicken and ¼ cup water. Simmer for 5–7 minutes.

4. Finish the Dish

  • Add cream, garam masala, and crushed kasuri methi.
  • Mix well and simmer for 2 more minutes.
  • Garnish with fresh coriander.

🍽️ Serving Suggestion:

Serve hot with roti, naan, or jeera rice.
