Ingredients:
- 1 kg carrots (grated)
- 1 liter full-fat milk
- 1 cup sugar (adjust to taste)
- 4 tbsp ghee (clarified butter)
- 8-10 green cardamom pods (crushed or powder)
- 10-12 cashews and almonds (chopped)
- 2 tbsp raisins (optional)
- A pinch of saffron strands (optional)
Instructions:
1. Cook the Carrots:
- Wash, peel, and grate the carrots finely.
- In a heavy-bottom pan, add grated carrots and milk.
- Cook on medium heat, stirring occasionally, until the milk reduces completely (this can take 45-60 minutes).
2. Add Sugar & Ghee:
- Once the milk has evaporated, add sugar and mix well.
- Cook for another 10-15 minutes till sugar dissolves and the mixture thickens.
3. Flavor & Garnish:
- Add ghee and crushed cardamom.
- Stir continuously and cook until the halwa starts leaving the sides of the pan.
- In a separate small pan, heat a little ghee and fry the nuts and raisins until golden.
- Add the fried nuts and raisins to the halwa and mix well.
- If using saffron, soak it in a tablespoon of warm milk and add it now.
4. Serve:
- Serve warm or chilled, garnished with more nuts if desired.
