📝 Ingredients (Makes 12 small idlis):
- 🌾 Moong dal (split yellow gram) – 1 cup
- 🫙 Sooji (optional, for texture) – 2 tbsp
- 🧂 Salt – to taste
- 🍋 Lemon juice – 1 tsp
- 🌿 Grated ginger – 1 tsp
- 🌶️ Green chili (finely chopped) – 1 (optional)
- 🥕 Finely chopped veggies (carrot, beans) – ¼ cup (optional)
- 🍃 Curry leaves – a few (optional)
- 🌼 Eno fruit salt – ¾ tsp or Baking soda – ¼ tsp
- 💧 Water – as needed for batter
👩🍳 Method:
- Soak & Grind:
Soak 1 cup moong dal in water for 2–3 hours. Drain and grind into a smooth batter using minimal water. - Prepare Batter:
In a bowl, mix the ground dal with sooji (optional), salt, ginger, green chili, lemon juice, and chopped veggies. Add water gradually to make a thick, pourable batter. - Add Leavening:
Just before steaming, mix in Eno fruit salt (or baking soda). The batter will turn frothy—stir gently. - Steam:
Grease idli moulds and pour the batter. Steam in an idli cooker or steamer for 10–12 minutes on medium heat. - Serve Hot 🔥
Serve with coconut chutney, mint chutney, or sambar. 🥥🍅
