Ingredients
- 2 cups gluten-free all-purpose flour (with xanthan gum if not already included)
- 1 tbsp baking powder
- ½ tsp salt
- 2 tbsp sugar (optional, for slight sweetness)
- ½ cup cold butter (cubed) or coconut oil for dairy-free
- ¾ cup cold milk (or almond milk for dairy-free)
- 1 tsp apple cider vinegar or lemon juice
Instructions
- Preheat oven to 220°C (425°F).
- In a large bowl, whisk flour, baking powder, salt, and sugar.
- Add cold butter cubes and rub with fingertips until crumbly.
- Mix milk + vinegar in a cup (this makes a buttermilk substitute).
- Pour the buttermilk into the dry mixture and stir just until combined (don’t overmix).
- Roll the dough gently on a floured surface to about ½-inch thickness.
- Cut biscuits using a round cutter or a glass.
- Place on a baking sheet and bake 12–15 minutes or until golden on top.
- Serve warm with butter, jam, or honey.
