📝 Ingredients:
For Dough:
- 2 cups all-purpose flour (maida)
- 1/4 cup ghee or oil
- Salt to taste
- Water (as needed)
For Filling:
- 1 cup yellow moong dal (soaked for 2 hours)
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp amchur (dry mango powder)
- Pinch of asafoetida (hing)
- Salt to taste
- 1-2 green chilies (finely chopped)
- 1 tbsp oil
👩🍳 Method:
1️⃣ Prepare the Dough:
Mix flour, salt, and ghee/oil. Rub it well to make a breadcrumb texture. Add water gradually to make a soft, non-sticky dough. Cover and rest for 30 minutes.
2️⃣ Make the Filling:
Grind soaked moong dal coarsely. In a pan, heat oil and add cumin, fennel, hing. Sauté ground dal with all spices until dry and aromatic. Let it cool.
3️⃣ Assemble the Kachoris:
Take a small dough ball, flatten, and fill with dal mixture. Seal and gently flatten again.
4️⃣ Fry to Golden Perfection:
Heat oil on medium-low. Deep-fry kachoris slowly until crispy and golden brown. 🫓🔥
