Fried Mango Pickle Recipe (Varutha Manga Achar)
Ingredients:
- Raw mango – 3 (medium-sized, chopped into small pieces)
- Gingelly oil (sesame oil) – ½ cup
- Mustard seeds – 1 tsp
- Fenugreek seeds – ½ tsp
- Asafoetida – ¼ tsp
- Turmeric powder – ½ tsp
- Kashmiri chili powder – 2 tbsp
- Regular chili powder – 1 tbsp (adjust as per spice preference)
- Salt – as required
- Vinegar – 2 tbsp
- Curry leaves – 2 sprigs
- Garlic – 10 cloves (crushed)
- Green chilies – 2 (slit)
- Water – ¼ cup
Preparation Method:
- Prepare the Mangoes:
- Wash and dry the raw mangoes completely.
- Cut them into small pieces and keep them aside.
- Frying the Mangoes:
- Heat gingelly oil in a pan.
- Add the chopped mangoes and fry on low flame until they slightly shrink and turn golden brown.
- Remove and keep aside.
- Tempering:
- In the same oil, add mustard seeds. Let them splutter.
- Add fenugreek seeds and curry leaves, sauté for a few seconds.
- Add garlic and green chilies, and sauté until aromatic.
- Adding Spices:
- Lower the flame and add turmeric powder, chili powders, and asafoetida.
- Mix well, ensuring the spices don’t burn.
- Final Mixing:
- Add the fried mango pieces and mix well.
- Pour vinegar and a little water, stirring continuously.
- Allow the mixture to cook for 2-3 minutes until it thickens.
- Cooling & Storing:
- Let the pickle cool completely.
- Store it in a clean, dry glass jar.
- Keep it in a cool, dry place. The pickle stays fresh for months!
