Will Last for Years Without Spoiling; This is Fried Mango Pickle

Fried Mango Pickle Recipe (Varutha Manga Achar)

Ingredients:

  • Raw mango – 3 (medium-sized, chopped into small pieces)
  • Gingelly oil (sesame oil) – ½ cup
  • Mustard seeds – 1 tsp
  • Fenugreek seeds – ½ tsp
  • Asafoetida – ¼ tsp
  • Turmeric powder – ½ tsp
  • Kashmiri chili powder – 2 tbsp
  • Regular chili powder – 1 tbsp (adjust as per spice preference)
  • Salt – as required
  • Vinegar – 2 tbsp
  • Curry leaves – 2 sprigs
  • Garlic – 10 cloves (crushed)
  • Green chilies – 2 (slit)
  • Water – ¼ cup

Preparation Method:

  1. Prepare the Mangoes:
    • Wash and dry the raw mangoes completely.
    • Cut them into small pieces and keep them aside.
  2. Frying the Mangoes:
    • Heat gingelly oil in a pan.
    • Add the chopped mangoes and fry on low flame until they slightly shrink and turn golden brown.
    • Remove and keep aside.
  3. Tempering:
    • In the same oil, add mustard seeds. Let them splutter.
    • Add fenugreek seeds and curry leaves, sauté for a few seconds.
    • Add garlic and green chilies, and sauté until aromatic.
  4. Adding Spices:
    • Lower the flame and add turmeric powder, chili powders, and asafoetida.
    • Mix well, ensuring the spices don’t burn.
  5. Final Mixing:
    • Add the fried mango pieces and mix well.
    • Pour vinegar and a little water, stirring continuously.
    • Allow the mixture to cook for 2-3 minutes until it thickens.
  6. Cooling & Storing:
    • Let the pickle cool completely.
    • Store it in a clean, dry glass jar.
    • Keep it in a cool, dry place. The pickle stays fresh for months!
