📝 Ingredients

  • 2 medium potatoes (cubed)
  • 1 medium brinjal/eggplant (cubed)
  • 1 large onion (finely chopped)
  • 2 tomatoes (chopped or pureed)
  • 1 tsp ginger-garlic paste
  • 2-3 green chilies (slit)
  • 1/2 tsp cumin seeds
  • 1/4 tsp hing (asafoetida)
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 3 tbsp mustard oil or ghee (for authentic dhaba flavor)

🔥 Instructions

  1. Fry Vegetables:
    • Heat 1 tbsp oil in a pan.
    • Fry cubed potatoes until golden and 70% cooked. Remove and keep aside.
    • Fry brinjal pieces till slightly tender. Set aside.
  2. Make Masala Base:
    • In the same pan, add more oil.
    • Add cumin seeds, hing, and green chilies.
    • Add onions and sauté until golden brown.
    • Stir in ginger-garlic paste and cook until raw smell goes away.
  3. Add Tomatoes & Spices:
    • Add chopped/pureed tomatoes.
    • Cook until oil separates.
    • Add turmeric, red chili, coriander powder, and salt.
    • Sauté the masala until well-roasted and thick.
  4. Combine & Cook:
    • Add the fried potatoes and brinjals to the masala.
    • Mix well, add a splash of water, cover, and simmer for 8–10 mins.
    • Cook till veggies are soft and masala coats them well.
  5. Finish:
    • Add garam masala, mix, and simmer for 1–2 mins.
    • Garnish with coriander leaves.
