🍛 Dhaba Style Aloo Baingan Recipe
📝 Ingredients
- 2 medium potatoes (cubed)
- 1 medium brinjal/eggplant (cubed)
- 1 large onion (finely chopped)
- 2 tomatoes (chopped or pureed)
- 1 tsp ginger-garlic paste
- 2-3 green chilies (slit)
- 1/2 tsp cumin seeds
- 1/4 tsp hing (asafoetida)
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves (for garnish)
- 3 tbsp mustard oil or ghee (for authentic dhaba flavor)
🔥 Instructions
- Fry Vegetables:
- Heat 1 tbsp oil in a pan.
- Fry cubed potatoes until golden and 70% cooked. Remove and keep aside.
- Fry brinjal pieces till slightly tender. Set aside.
- Make Masala Base:
- In the same pan, add more oil.
- Add cumin seeds, hing, and green chilies.
- Add onions and sauté until golden brown.
- Stir in ginger-garlic paste and cook until raw smell goes away.
- Add Tomatoes & Spices:
- Add chopped/pureed tomatoes.
- Cook until oil separates.
- Add turmeric, red chili, coriander powder, and salt.
- Sauté the masala until well-roasted and thick.
- Combine & Cook:
- Add the fried potatoes and brinjals to the masala.
- Mix well, add a splash of water, cover, and simmer for 8–10 mins.
- Cook till veggies are soft and masala coats them well.
- Finish:
- Add garam masala, mix, and simmer for 1–2 mins.
- Garnish with coriander leaves.
