Chicken Majestic is a spicy, semi-dry Andhra-style chicken starter that’s popular in South Indian restaurants and parties. It features thinly sliced chicken strips marinated, fried, and then tossed in a tangy-spicy yogurt-based masala.

📝 Ingredients:
For Marination:
- Boneless chicken – 250g (cut into thin strips)
- Ginger garlic paste – 1 tsp
- Red chili powder – 1 tsp
- Turmeric – ¼ tsp
- Garam masala – ½ tsp
- Corn flour – 1 tbsp
- All-purpose flour (maida) – 1 tbsp
- Egg – 1 (optional, for binding)
- Salt – to taste
For Tempering:
- Oil – 1 tbsp
- Green chilies – 3–4 (slit)
- Curry leaves – a sprig
- Ginger garlic paste – ½ tsp
- Yogurt – 3 tbsp (whisked)
- Soy sauce – 1 tsp (optional for color)
- Pepper powder – ½ tsp
- Coriander or spring onion – for garnish
👩🍳 Method:
- Marinate chicken with all ingredients listed under marination. Let it sit for 30–60 minutes.
- Deep fry or shallow fry marinated chicken strips till golden and crispy. Drain on paper towel.
- In a pan, heat oil. Add slit green chilies, curry leaves, and ginger garlic paste. Sauté until aromatic.
- Lower the flame, add whisked curd, pepper powder, and a little salt. Cook till oil separates.
- Toss the fried chicken into the masala and sauté for 3–5 minutes till coated well.
- Garnish with spring onions or fresh coriander.
