🥣 Easy Homemade Gluten-Free Biscuits

Ingredients

  • 2 cups gluten-free all-purpose flour (with xanthan gum if not already included)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar (optional, for slight sweetness)
  • ½ cup cold butter (cubed) or coconut oil for dairy-free
  • ¾ cup cold milk (or almond milk for dairy-free)
  • 1 tsp apple cider vinegar or lemon juice

Instructions

  1. Preheat oven to 220°C (425°F).
  2. In a large bowl, whisk flour, baking powder, salt, and sugar.
  3. Add cold butter cubes and rub with fingertips until crumbly.
  4. Mix milk + vinegar in a cup (this makes a buttermilk substitute).
  5. Pour the buttermilk into the dry mixture and stir just until combined (don’t overmix).
  6. Roll the dough gently on a floured surface to about ½-inch thickness.
  7. Cut biscuits using a round cutter or a glass.
  8. Place on a baking sheet and bake 12–15 minutes or until golden on top.
  9. Serve warm with butter, jam, or honey.
