🌸 Paal Kozhukattai Recipe
Ingredients:
- Rice flour – 1 cup
- Water – 1 cup (for dough)
- Coconut milk – 1 cup (thick)
- Regular milk – 1 cup
- Jaggery – ¾ cup (powdered) (or sugar as variation)
- Cardamom powder – ½ tsp
- Ghee – 1 tsp
- A pinch of salt
Method:
- Prepare Dough –
- Heat 1 cup water with a pinch of salt & ½ tsp ghee.
- Add rice flour slowly, stir well.
- Knead into a smooth soft dough when warm.
- Make Kozhukattai Balls –
- Pinch small portions of dough and roll into tiny seed-sized balls.
- Keep covered with a damp cloth to avoid drying.
- Cook Balls –
- Boil 1 cup milk in a pan.
- Drop the rice balls gently and cook until they float & turn glossy.
- Add Sweetness –
- Melt jaggery in little water, strain, then add to the cooked balls.
- Mix well and let it simmer for 3–4 mins.
- Finish with Coconut Milk –
- Add thick coconut milk & cardamom powder at the end.
- Switch off immediately (don’t boil coconut milk too much).
- Serve Warm – Creamy, aromatic Paal Kozhukattai ready 🌸🥛✨
