🍳💪 High-Protein Anda Burji: Desi Home-Style Power Breakfast!

🧂 Ingredients:

  • 4 large eggs
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chilli, chopped (optional)
  • ½ tsp cumin seeds
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp garam masala
  • Salt to taste
  • 1 tbsp oil or ghee
  • 2 tbsp chopped coriander leaves
  • (Optional for extra protein): 2 tbsp paneer crumble or boiled moong

👩‍🍳 Instructions:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add tomatoes, green chilli, and all the dry spices. Cook until the tomatoes soften and oil separates.
  4. In a bowl, whisk eggs with a pinch of salt.
  5. Pour the eggs into the pan and stir continuously on low heat until they form soft, scrambled curds.
  6. Mix in paneer or boiled moong if using, and cook for another minute.
  7. Garnish with coriander leaves and serve hot.

🍽️ Serve With:

  • Whole wheat roti, multigrain bread, or millet toast
  • Fresh cucumber & onion salad on the side

💡 Protein Boost Tip:

Add 1 scoop of unflavored whey or boiled egg whites while scrambling to take the protein count up by 10–15g without altering the taste much.
