🍗🌿 Methi Malai Chicken – Creamy & Flavorful Dinner Delight

Ingredients

For chicken:

  • 500 g chicken (bone-in or boneless)
  • 1 cup fresh methi leaves (cleaned & chopped)
  • 1 large onion (finely chopped)
  • 1 tomato (pureed)
  • 1 tbsp ginger-garlic paste
  • 2 green chillies (slit)
  • ½ cup fresh cream (malai)
  • ½ cup milk (adjust for gravy consistency)
  • 2 tbsp curd (beaten)
  • 1 tsp kasuri methi
  • ½ tsp garam masala
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chilli powder (adjust)
  • 2 tbsp oil or ghee
  • Salt as required

Instructions

  1. Sauté the methi
    • Heat 1 tbsp oil in a pan → add fresh methi leaves.
    • Cook for 2–3 minutes until raw smell goes away. Keep aside.
  2. Cook the chicken
    • In the same pan, heat 1 tbsp oil/ghee.
    • Add cumin seeds → let them splutter.
    • Add onions → sauté until golden brown.
    • Add ginger-garlic paste & green chillies → fry until aroma comes.
    • Add tomato puree + turmeric + coriander + red chilli powder → cook till oil separates.
    • Add chicken pieces & curd → mix well & cook for 5–6 mins.
  3. Make it creamy
    • Add sautéed methi leaves into the chicken.
    • Pour milk & cook until chicken becomes tender.
    • Add cream, garam masala & kasuri methi → simmer 2–3 mins.
    • Adjust salt and thickness as needed.

Serve

Garnish with a pinch of kasuri methi & serve hot with:
✔ Naan
✔ Paratha
✔ Jeera rice
