🌟 Jackfruit Kozhukatta Recipe (Approx. 10 pieces)
📝 Ingredients:
- Ripe jackfruit (chakka chula) – 1 cup (finely chopped or mashed)
- Grated coconut – ½ cup
- Jaggery – ½ cup (adjust to taste)
- Rice flour – 1 cup (roasted, for outer layer)
- Cardamom powder – ½ tsp
- Ghee – 1 tsp
- Water – as needed
- Salt – a pinch
🔥 For the Filling:
- In a pan, add jaggery with 2-3 tbsp of water and melt it.
- Strain to remove impurities (optional).
- Add mashed jackfruit, grated coconut, and cardamom powder.
- Stir until the mixture thickens and becomes sticky.
- Add a little ghee for flavor. Let it cool.
🫓 For the Outer Dough:
- Boil 1 cup water with a pinch of salt.
- Gradually add it to the roasted rice flour, mixing with a spoon.
- When warm, knead into a smooth, soft dough.
🧁 Assembling the Kozhukatta:
- Take small balls of dough and flatten them in your palm.
- Place 1 spoon of the jackfruit filling inside.
- Fold and seal the edges. Shape into balls or half-moon dumplings.
🧂 Steam It:
- Place them in a steamer/idli cooker.
- Steam for 10–15 minutes or until the outer layer is cooked and shiny.
