How to Make Delicious Rasamalai at Home

Rasamalai is a Indian dessert recipe prepared from chenna or paneer balls. It is very fond of weddings and special occasions. It is very delicious one which it gives yummy taste and it is topped with choice of dry fruits including pista and badam. Rasamalai which can make easily at home with limited ingredients. This dessert is originated from Bengal but it is very famous in all over India.

Ingridients:

Serves: 8 Servings

For Preparation Of  Chenna / Paneer  :

  • 1 Litre milk
  • 2tbsp of Lemon Juice
  • 1 Cup of Water

For Sugar Syrup :

  • 1½ Cup Sugar
  • 8 Cups of Water

For Rabdi / Rabri :

  • 1 Litre milk
  • 2 Cups of Sugar
  • 1tbsp of Cardamom powder
  • 5 Pistachios chopped
  • 5 Badam chopped

Method of  Chenna / Paneer balls :

  • Heat the 1 Litre of Milk, once the milk gets boils, allow it to cool.
  • The milk will curdle by pouring the lemon juice into the milk.
  • Drain the water from the Curdled Milk. After draining the water from the curdled milk, the protein that is left is called the “Chenna”  or “Paneer”
  • Mash the paneer, until it becomes smooth.
  • Let it dry for about a half an hour.
  • Make the paneer into small balls, while forming the balls make it sure the balls do not have any cracks and make it flatten, keep it aside.

 

Preparation of Sugar Syrup :

  • First, take sugar and water.
  • Boil the syrup for 10 minutes.
  • After that, drop the pepared paneer balls .
  • Let it boil for 15 mintues.
  • Furthermore, squeeze of sugar syrup.

 

Preparation of Rabdi / Rabri :

  • Boil the milk, until the milk gets thicken and reduces to one-third.
  • After that, add sugar, cardamom powder.
  • Stir it well and get to boil.
  • Then, transfer the thicken rabdi / rabri into bowl and refrigerate for 2-3 hours.

 

 Rasamali

  • Drop the squeezed paneer balls into refrigerated rabdi / rabri.
  • Finally, garnish with dry fruits (pista and badam).
