🥗 Light & Healthy South Indian Moong Dal Idli Recipe 🧁💛

No rice, no fermentation โ€“ ready in under 30 minutes!

📝 Ingredients (Makes 12 small idlis):

  • 🌾 Moong dal (split yellow gram) โ€“ 1 cup
  • 🫙 Sooji (optional, for texture) โ€“ 2 tbsp
  • 🧂 Salt โ€“ to taste
  • 🍋 Lemon juice โ€“ 1 tsp
  • 🌿 Grated ginger โ€“ 1 tsp
  • 🌶️ Green chili (finely chopped) โ€“ 1 (optional)
  • 🥕 Finely chopped veggies (carrot, beans) โ€“ ยผ cup (optional)
  • 🍃 Curry leaves โ€“ a few (optional)
  • 🌼 Eno fruit salt โ€“ ยพ tsp or Baking soda โ€“ ยผ tsp
  • 💧 Water โ€“ as needed for batter

👩‍🍳 Method:

  1. Soak & Grind:
    Soak 1 cup moong dal in water for 2โ€“3 hours. Drain and grind into a smooth batter using minimal water.
  2. Prepare Batter:
    In a bowl, mix the ground dal with sooji (optional), salt, ginger, green chili, lemon juice, and chopped veggies. Add water gradually to make a thick, pourable batter.
  3. Add Leavening:
    Just before steaming, mix in Eno fruit salt (or baking soda). The batter will turn frothyโ€”stir gently.
  4. Steam:
    Grease idli moulds and pour the batter. Steam in an idli cooker or steamer for 10โ€“12 minutes on medium heat.
  5. Serve Hot 🔥
    Serve with coconut chutney, mint chutney, or sambar. 🥥🍅
